Family Desserts 

I’ve mentioned previously that my husband is not a big fan of desserts. It doesn’t make any sense to me. If someone were to offer him either an after dinner steak or piece of cake, it wouldn’t even be something he needed to think about; he would always go for the steak. But me, I’d ask if I could have two desserts.

My son has inherited my love of desserts. Recently we were at a birthday party with a piñata. My son was elbowing and pushing kids to fill his bucket with the fallen candy. Other kids had 10-15 pieces. No exaggeration, my son had over 100 pieces. I had to give away his candy to other kids and apologize to their parents. It was one of those situations where I saying “that was not a nice thing to do,” while thinking “I get it.”

Karo® Corn Syrup

Last month my son asked me to make cookies. Cookies are one of the few desserts that my husband loves. So, I was sold. My son wanted chocolate chip cookies that he could use for ice cream cookie sandwiches. 

I had read that Karo® Corn Syrup makes chewier, great tasting cookies, so I wanted to give it a try. Given that I’m southern and Karo is a staple for Southern meals such as Thanksgiving Pecan Pie, baked goods, and a pancake topping, I had a bottle on hand.

This is a sponsored post, but honestly I don’t even know if there are other brands of corn syrup. In my mind, it’s only Karo. It’s actually the leading corn syrup brand and has been around for over 100 years.

Cookies with Karo Corn Syrup

Well, using Karo in my cookies was a good choice. They turned out to be AMAZING! They were chewy on the outside, soft on the inside, and overall delicious. Basically, chocolate chips cooked kicked up a notch.

Chewy Chocolate Chip Candy Cookies

The day after I made these Chewy Chocolate Chip Candy Cookies I thought, “I should take good photos so I can share the recipe!” I went to the kitchen to get them, and they were gone. Somehow, in two days, and likely in large part to my husband’s midnight snacking, they were demolished. 

But, it all turned out just fine. I got to make them again. And no one in my family was sad about that. 

Tips for Making Chewy Cookies

These chewy chocolate chip candy cookies are easy and quick to make. In fact, both my two and four year olds were able to assist me. But here a few tips to help ensure success:

  • Do not substitute anything for the Karo Corn Syrup. It’s honestly what makes these cookies so chewy, yet soft, and just downright tasty. You should even consider adding it to some of your other cookie recipes.
  • Don’t leave out the cornstarch. It may only be a small amount, but it helps to make the cookies even softer.
  • I prefer the mini chocolate chips as I believe it pairs better with the larger candies, but no problem to substitute regular sized chocolate chips.
  • If you prefer a candy other than candy coated chocolate pieces, substitute away! You can’t go wrong with these cookies.

Chewy Chocolate Chip Candy Cookies

Ingredients

  • 1/2 cup unsalted butter softened
  • 1/4 cup plus 1 tbsp sugar
  • 1/4 cup plus 1 tbsp light brown sugar
  • 1/4 cup Karo® Corn Syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 3/4 cup all purpose flour
  • 1 teaspoon cornstarch
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup mini chocolate chips
  • 1/2 cup plus 3 tbsp candy coated chocolate

Instructions

  • Preheat oven to 350 degrees. Line baking sheets with parchment paper or silicone baking mats.
  • In base of a stand mixer fit with paddle attachment, beat butter, sugar, brown sugar, and Karo® Corn Syrup until fluffy, about 2 minutes.
  • Mix in egg and vanilla extract until well combined.
  • In a small bowl, stir together flour, cornstarch, salt, and baking soda. Gradually beat into butter mixture, about 1/2 cup at a time, scraping down sides as needed.
  • Stir in mini chocolate chips and 1/2 cup of the candy coated chocolate.
  • Scoop into tablespoon sized balls and place on prepared cookie sheet, about 2 inches apart. If desired, press remaining 3 tbsp of candy coated chocolate into the tops of the cookies.
  • Bake for 10-11 minutes, or until tops are golden brown.
