Last Minute Dinner

Every weekend I make a list of meals I want to cook the next week, along with the ingredients I want to use in them.

Generally, as I’m meal planning, I decide which night I want to make each meal. For nights that I have time, I try to do more complex recipes. However, expiration dates can really throw off my plans.

A few weeks ago I had planned to make pork ragu over polenta cakes. However, the day the pork expired, I did not have near enough time to make that meal.

I looked through my refrigerator, and saw that I had plenty of ginger and garlic. The answer to my problem was obvious: Ginger Garlic Pork.

Note: If you’re thinking “the pork ragu sounded so good though,” don’t worry, I recently made a beef ragu over polenta cakes recipe that I’ll be sharing very soon.

Garlic Ginger Pork

The dinner came together quickly, and beautifully. I used my Honey Garlic Pork with Fried Rice as a starting point for the pork. However, I cut back the honey and added more spices and ginger.

Here are a couple of tips to ensure success when you make this recipe:

Pork Strips

It is important to cut the pork into evenly sized strips, about 3″ in length by 1/2″ in width, to ensure that the pork cooks evenly. If you have different sizes of pork strips, your smaller strips will likely overcook as you try cook through the larger strips.

I do not give a time for the pork as you want to make sure that your pork is cooked through, which is to at least 145 degrees fahrenheit.

Serving

I prefer this pork served over jasmine rice. Jasmine rice is a bit on the sticky side, which I think goes well with the honey. However, long grain white rice or basmati rice also work well.

Green onions not only look beautiful on top of the pork, but add they add a wonderful, fresh taste to the dish. Make sure you don’t forget them!

Ingredients

Pork

  • 2.5 pound pork tenderloin cut into thin strips about 3” in length by 1/2” in width
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon sesame oil
  • 1 tbsp corn oil
  • 2 tbsp fresh grated ginger
  • 4 cloves fresh minced garlic

Sauce

  • 1/4 cup honey
  • 3 tbsp light brown sugar
  • 1 teaspoon sriracha
  • 1 tbsp rice wine vinegar
  • 3 tbsp reduced sodium soy sauce
  • 1 tbsp cornstarch

Serving

  • Green onions for serving
  • Sesame seeds for serving
  • Jasmine rice cooked according to package directions, for serving

Instructions

Pork

  • Heat sesame oil and corn oil in a large skillet over medium-high heat. Add pork and sauté until cooked through (to at least 145 degrees). Drain excess fat, but leave pork in skillet.
  • Add garlic and ginger. Sauté for 30-60 seconds.
  • Remove skillet from heat.

Sauce

  • In a small sauce pan, stir together honey, brown sugar, sriracha, vinegar, and soy sauce. While constantly stirring, sprinkle cornstarch over mixture. Bring a gentle simmer and let simmer until mixture thickens, about 8 minutes.

Serving

  • Pour sauce over cooked pork and stir well.
  • Serve over jasmine rice. Top with green onions and sesame seeds.
