Weeknight Dinners

My husband and I love to cook. Typically, on the weekends, we spend hours creating meals. He’ll keep the smoker running all day while I make various desserts, and try to sneak bites when my kids aren’t looking.

Weeknights, we don’t have the luxury of spending hours on meals. Between work, transporting our children to and from school, packing lunches and bookbags, and generally keeping our kids out of trouble, I have a max hour of time (spread across multiple hours, in small increments) to prepare dinner.

So, I have to come up with quick dinners at least a few nights a week. But my kids, having grown up with my husband and I constantly experimenting with flavors and cooking methods, have grown a bit picky. And not picky in the way you might imagine.

For example, my kids will not eat white rice because it’s “too plain.” My 5 year old thinks standard hamburgers are boring, because he likes my Chimichurri Burgers. And my 3 year old prefers homemade, well seasoned mac and cheese over boxed mac and cheese.

What this boils down to is: I need flavorful meals, quickly.

Spice Blends

I’m a big fan of spice blends. Back in my pre-children days, I would always walk by the spice section in Wal-Mart and pick a few things to experiment with. Now, I primarily do grocery pick-up from Wal-Mart, so I just search online for the new arrivals.

Recently, I saw a few spice blends from Kinder’s®, and got a little excited. I scrolled through the photos and decided that I needed a few of those tasty blends in my life. So I added their Kinder’s®​ Buttery Steakhouse Rub, Kinder’s®​ Tequila Lime Rub, and Kinder’s®​ Cali’s Blackened Rub to my cart.

Spice blends like these give rich flavors in a matter of seconds – providing great flavor with minimal effort.

My first experimentation was with the Buttery Steakhouse Rub. It has real dairy butter with the herbs and cracked pepper of steakhouse seasoning.

I knew the flavor profile would be good for a variety of proteins and vegetables, not just meat, and I needed a quick side. So, threw some on baby potatoes and popped them in the air fryer. Huge success.

Air Fried Buttery Steakhouse Potatoes

The Buttery Steakhouse Rub on the potatoes was such a success in my house, I ended up making them several times. On the day I decided to photograph the potatoes, I had poured a fair amount of the spice blend into a bowl.

When I was done photographing the potatoes, I only had about 15 minutes to get the rest of dinner ready. Looking at the bowl of Buttery Steakhouse Rub, I thought, “I’ll just rub that on some chicken and throw the chicken on the grill.”

The chicken was a second success. The Kinder’s seasonings are convenient, versatile products that are simple to use.

Potatoes

For this recipe, you need baby potatoes, which are sometimes called new potatoes, or creamers.

You can use any variety that you want. The important thing is that you cut the larger potatoes in half or in fourths, so that all of the potatoes are roughly equal in size.

Olive Oil

Do not skimp on the olive oil! You want to make sure that the potatoes are well covered in oil so they become nice and crispy in the air fryer.

I generally toss my potatoes in the olive oil, but alternatively, you can spray them.

Kinder’s Buttery Steakhouse Rub

The Kinder’s Buttery Steakhouse Rub is the star of the show for these potatoes. The first time I made them my husband asked, “these are great, what did you put on them?”

Ingredients

  • 1.5 pounds baby potatoes
  • 3 tablespoons olive oil
  • 2 tablespoons Kinder's Buttery Steakhouse Rub
  • 1-2 teaspoons kosher salt for serving
  • 2-3 tablespoons chopped fresh parsley for serving

Instructions

  • Cut larger baby potatoes in half, or in fourths, so that each piece is roughly the same size.
  • Toss the cut potatoes with olive oil. Then sprinkle with Kinder Buttery Steakhouse Rub and toss again to ensure that potatoes are well coated.
  • Place potatoes in single layer in air fryer basket.
  • Air fry potatoes at 400 degrees for 10 minutes. Remove potatoes and stir them around. Air fry for another 8 to 10 minutes, or until potatoes are browned and crispy.
  • While potatoes are still warm, sprinkle with desired amount of kosher salt and chopped fresh parsley.
