Cilantro Lime Rice

This cilantro lime rice is as good at Chipotle. It couldn't be easier to make and takes your at home rice to the next level.

Ingredients

  • 1.5 cups long grain white rice
  • 1 tbsp butter
  • 3 cups water
  • 3/4 teaspoon salt
  • zest of 1/2 lime
  • juice of 1 lime
  • 1/2 cup cilantro chopped finely and packed

Instructions

  • In medium sauce pan over medium heat, melt butter. Add rice and saute for about 1 minute, until lightly browned.
  • Stir in water, salt, and lime zest. Bring to a boil. Then, cover, and reduce to a simmer. Cook until water is absorbed, about 11-13 minutes.
  • Stir in cilantro and lime juice.
