Flourless Chocolate Torte

  • 1 pound semi-sweet chocolate good quality
  • 1/2 cup unsalted butter
  • 1/2 cup sugar
  • 4 egg yolks
  • 6 egg whites
  • pinch salt
  • cocoa powder for topping

Berry Topping

  • 2 cups frozen mixed berries
  • 1/4 cup sugar
  • 1 tbsp lemon juice
  • 1/2 tbsp cornstarch



  • Preheat oven to 325 degrees. Grease bottom and sides of a 9 inch springform pan.
  • Use an electric mixer on medium-low speed to beat egg whites and salt until they just start to foam, about 20 seconds. Set aside.
  • In a double boiler over medium heat, melt butter and chocolate. Stir constantly until smooth. Remove from heat and whisk in sugar and egg yolks.
  • Fold in egg whites until just incorporated. Pour into prepared pan. Bake for 37-40 minutes (middle of torte should no longer look wet).
  • Let cool completely before removing sides of pan.
  • Once cooled and removed from pan, sift cocoa powder over top of torte.

Berry Topping

  • In a small sauce pan over medium-high heat, stir together berries, sugar, and lemon juice. Cook for 10 minutes, stirring very frequently, using spoon to squish berries.
  • Next, w continuously stirring, add cornstarch. Continue to stir and cook until mixture has thickened, about 2 minutes.
  • Remove from heat. Serve over torte.
