Homemade Salsa Verde
Fresh tomatillos cooked with garlic, onion, and jalapenos, then blended together with lime juice and cilantro. This Homemade Salsa Verde is easily customizable for your spice preferences, and is addictively delicious!
Servings: 10 servings
- 1.5 lb tomatillos ~8 tomatillos, husks removed and rinsed
- 2 whole cloves garlic skin removed
- 1/2 white onion coarsely
- 1-2 jalapenos seeds removed, coarsely chopped
- 1 tbsp fresh lime juice
- zest 1/2 medium lime
- 1/3 cup chopped cilantro loosely packed
- 1-2 teaspoons kosher salt
In a medium sized pot, place tomatillos, garlic cloves, onions, jalapenos, and 1 teaspoon kosher salt. Fill with water until tomatillos are covered in water.
Bring water to a boil over medium-high heat. Let mixture boil until tomatillos are soft, and can be easily pierced with a fork.
Drain water from pot, place remaining ingredients into a blender or food processor. Add lime juice, lime zest, and cilantro. Blend until mixture is smooth. Taste and add salt as you desire (I add about 1 teaspoon of kosher salt).
If you want to serve warm, you may serve immediately. If you want to serve it cool, place in refrigerator for 3-4 hours.
