Ingredients

  • 1.5 lb tomatillos ~8 tomatillos, husks removed and rinsed
  • 2 whole cloves garlic skin removed
  • 1/2 white onion coarsely
  • 1-2 jalapenos seeds removed, coarsely chopped
  • 1 tbsp fresh lime juice
  • zest 1/2 medium lime
  • 1/3 cup chopped cilantro loosely packed
  • 1-2 teaspoons kosher salt

Instructions

  • In a medium sized pot, place tomatillos, garlic cloves, onions, jalapenos, and 1 teaspoon kosher salt. Fill with water until tomatillos are covered in water.
  • Bring water to a boil over medium-high heat. Let mixture boil until tomatillos are soft, and can be easily pierced with a fork.
  • Drain water from pot, place remaining ingredients into a blender or food processor. Add lime juice, lime zest, and cilantro. Blend until mixture is smooth. Taste and add salt as you desire (I add about 1 teaspoon of kosher salt).
  • If you want to serve warm, you may serve immediately. If you want to serve it cool, place in refrigerator for 3-4 hours.
