Lemon Blueberry Granola
Lemon Blueberry Granola. This granola is easy to make, healthy, and amazing. Perfect with milk for breakfast or to serve on yogurt!
Servings: 12 servings
- 1 1/4 cups old fashioned oats
- 1 cup steel cut oats
- 2 tbsp hemp seeds
- 2 tbsp flax seeds
- 1/2 cup dried sweetened blueberries
- zest of 1 lemon
- juice of 1 lemon
- 2 teaspoons vanilla extract
- 1/4 teaspoon cardamom
- 1/4 teaspoon salt
- 1/4 cup coconut oil
- 1/4 cup maple syrup
- 2 tbsp honey
Preheat oven to 300 degrees. Line a baking sheet with parchment paper or silicone mats.
In a small bowl, whisk together lemon zest, lemon juice, vanilla, cardamom, salt, coconut oil, maple syrup, and honey. Stir in all oats, seeds and blueberries.
Spread on prepared baking sheet. Bake for 45 minutes, stirring every 15 minutes.
