Curry Meatballs with Coconut Rice

Ingredients

Meatballs

  • 1 pound ground chicken
  • 1 tbsp fresh ginger grated
  • 1 tbsp red curry paste
  • 1/2 teaspoon ground coriander
  • 3 cloves garlic
  • 1/2 cup dry Panko breadcrumbs
  • 2 tbsp cilantro chopped
  • 2 tbsp soy sauce
  • 1 tbsp fresh lime juice
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Curry Sauce

  • 1 tbsp vegetable oil
  • 2/3 cup shredded carrots
  • 3 tbsp red curry diviced
  • 3 cloves garlic
  • 1/2 tbsp fresh ginger grated
  • 1 13.6 ounce can full fat coconut milk
  • 1 cup chicken broth
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tbsp sugar
  • 2 tbsp soy sauce
  • 2 tbsp lime juice
  • 1 red pepper sliced thinly
  • 1 cup snow peas

Rice

  • 2 cups Jasmine Rice
  • 1 13.5 ounce can can full fat coconut milk
  • 1.5 cups water
  • 1/2 teaspoon salt

Instructions

Meatballs

  • Preheat oven to 350 degrees. Line large baking sheet with parchment paper or baking mat.
  • In a large bowl, mix together all meatball ingredients. Form into ~1 tbsp sized balls. Place balls on prepared baking sheet.
  • Bake for 13 minutes.

Sauce

  • Heat oil in a large pot over medium heat. Add carrots and 2 tbsp of red curry, and cook for 2-3 minutes.
  • Add garlic and ginger. Stir for about 30 seconds.
  • Stir in coconut milk, chicken broth, pepper, salt, sugar, soy sauce, lime juice, and 1 tbsp red curry. Once well combined, add in meatballs and simmer uncovered for 10 minutes.
  • Add in red pepper and snow peas. Simmer for another 5 minutes.

Rice

  • In a medium sized sauce pan over medium-high heat, combine coconut milk, water, and salt, and bring to a boil.
  • Once boiling, stir in rice. Reduce to a simmer and cover. Simmer for 15 minutes or until liquid absorbed.

Serving

  • Serve meatballs and sauce over rice. Garnish with cilantro and lime if desired.
