  • 1 cup couscous
  • 1 cup water
  • 1/2 tbsp butter
  • 1/4 teaspoon salt


  • 2 tbsp fresh basil chopped
  • 2 tbsp fresh oregano chopped
  • 1/2 medium sized cucumber diced into ~1/4" chunks, about 1/2 cup
  • 1 cup baby tomatoes cut into fourths or halves
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup feta cheese crumbles



  • In a medium sized sauce pan over high heat, bring water to a boil. Once boiling, stir in couscous, butter, and salt. Cover and remove from heat. Let sit for 10 minutes, then fluff couscous.


  • In a medium sized bowl, stir together couscous, basil, oregano, cucumber, and tomatoes.
  • Mix together balsamic vinegar, olive oil, salt, and pepper in a small bowl.
  • Pour balsamic mixture over couscous and stir well. Finally, stir in feta cheese.
