In a small bowl, stir together baking soda and water until baking soda has dissolved in water. Add turkey and stir until well combined. Let sit for 20 minutes.
Stir in maple syrup, oregano, garlic powder, thyme, salt, and pepper.
Form sausage into 8 patties that are about 4 to 5 inches in diameter and about 1/3 inch in thickness Set patties on parchment or wax paper. NOTE: You only need 6 patties for this recipe, so you can freeze the additional 2 patties for latter.
Heat olive oil in a large skillet over medium-high heat. Add patties to skillet. Cook for about 2.5 minutes a side, or until side has browned well. Then flip and brown other side of patty. NOTE: If you cannot fit all the patties on the skillet at once, you will need to add oil before the next addition.
Set patties aside, but leave grease in pan to cook eggs.
Preheat oven to 350 degrees. Grease a 9x9 baking pan or a muffin tin pan with baking spray.
Place the skillet you used for the sausage over medium-high heat. Add onion and bell pepper. Saute until softened, about 5 minutes. Add garlic and saute for an additional 30 seconds. Remove from heat.
Place vegetables in a small bowl and stir together with eggs, salt, and pepper.
Cooking and cutting: For 9x9 baking pan: Pour eggs into greased pan. Bake for 16-18 minutes, or until eggs are cooked through. Let cool for 5 minutes. Flip onto cutting board.
