Servings: 10 patties
- 2 cups fresh corn kernels
- 1 medium sized jalapeño seeds removed
- 2 tbsp fresh cilantro chopped
- ¼ cup red bell pepper chopped
- ¼ cup red onion chopped
- 1 tbsp lime juice
- ¼ teaspoon garlic powder
- ¼ teaspoon chili powder
- ¼ teaspoon black pepper
- ½ teaspoon salt
- 1 large egg beaten
- ½ cup Mexican cheese blend
- ½ cup Jiffy corn muffin mix
- ¼ cup self rising cornmeal yellow or white
- 4 tbsp vegetable oil divided
- sour cream for topping
In a large bowl, combine all of the ingredients, except for the vegetable oil. Stir until very well combined.
Use your hands to form batter into patties that are 3 to 4 inches in diameter, and about ¾ inch in thickness. Recipe will make ~10 patties of this size.
Heat 2 tbsp of vegetable oil in a large skillet over medium-high heat. Place patties in a single layer. Cook until browned, about 3 minutes. Flip patties and cook on other side until browned. Remove cooked patties and set on paper towels to cool.
Add 2 tbsp of vegetable oil to skillet and repeat for remaining patties. If your skillet will not fit half of the patties, you will need to add more oil each time you add new patties.
Serve with sour cream if desired.
