Ingredients

Chicken

  • 1 pound ground chicken
  • 1 teaspoon cornstarch
  • 1 tablespoon water
  • 1 tbsp olive oil
  • 2 cloves fresh minced garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon ground thyme
  • 1 teaspoon dried oregano
  • 2 tbsp pesto

Sauce

  • 1/4 cup unsalted butter
  • 2 cloves fresh minced garlic
  • 2 tbsp all purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon onion powder

Assembly

  • 12 ounce package dried bow tie pasta
  • 1 cup grape tomatoes halved
  • 1/3 cup chopped fresh basil
  • 4 ounces fresh mozzarella sliced
  • balsamic reduction to taste

Instructions

Chicken

  • Stir together cornstarch and water until smooth, then stir together with chicken. Let sit for 20 minutes.
  • Stir garlic, salt, pepper, onion powder, oregano, and thyme together with chicken.
  • Heat olive oil in a skillet over medium-high heat. Add chicken with spices. Saute until chicken is cooked through, about 6 minutes. Then add pesto and saute for another minute. Remove from heat and set aside.

Sauce

  • Heat butter in a small sauce pan over medium heat. Stir continuously until butter is amber is color and has a nutty smell, about 10 minutes. Add garlic and stir for another 30 seconds.
  • Remove from heat and stir in flour, salt, pepper, and onion powder until well mixed. Let sit for about 5 minutes before using.

Assembly

  • Cook pasta according to package directions.
  • In an oven safe pot, stir together chicken, tomatoes, and fresh basil.
  • Pour brown butter sauce over mixture and stir until well combined. Spread sliced mozzarella over top of pasta.
  • Place in oven under broiler until cheese starts to melt, about 2 minutes. Drizzle with balsamic reduction before serving.
