Preheat oven to 350 degrees. Line baking sheets with parchment paper or silicone baking mats.
In base of a stand mixer fit with paddle attachment, beat butter, sugar, brown sugar, and Karo® Corn Syrup until fluffy, about 2 minutes.
Mix in egg and vanilla extract until well combined.
In a small bowl, stir together flour, cornstarch, salt, and baking soda. Gradually beat into butter mixture, about 1/2 cup at a time, scraping down sides as needed.
Stir in mini chocolate chips and 1/2 cup of the candy coated chocolate.
Scoop into tablespoon sized balls and place on prepared cookie sheet, about 2 inches apart. If desired, press remaining 3 tbsp of candy coated chocolate into the tops of the cookies.
Bake for 10-11 minutes, or until tops are golden brown.
