Chicken and Onion
- 1 teaspoon cornstarch
- 1 pound ground chicken
- 1/2 tablespoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil divided
- 1/2 medium red onion diced
Dressing
- 3 tablespoons olive oil
- 3 tablespoons white wine vinegar
- 1 teaspoon lemon juice
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried parsley
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried marjoram
- 1 teaspoon honey
- 1/8 teaspoon dried ground thyme
Assembly
- 1 cup Pearl Couscous cooked according to package instructions
- 4 ounces Feta cheese crumbles
- 1 medium cucumber cut into bite sized pieces
- 1 cup halved cherry tomatoes
Chicken and Onion
In a small bowl, stir together water and cornstarch until smooth. Add chicken, Italian seasoning, salt, and pepper. Stir until well combined. Let sit for 10 minutes before cooking.
Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add diced red onion. Sauté until softened, about 5 minutes. Remove onion and set aside.
Add another tablespoon of oil to skillet. Add chicken. Sauté until cooked through.
Assembly
In a large bowl, stir together couscous with the cooked chicken and onion. Add dressing and stir until well combined.
Toss in feta, cucumber, and tomatoes.
