Cake
- 1 pound semi-sweet chocolate good quality
- 1/2 cup unsalted butter
- 1/2 cup sugar
- 4 egg yolks
- 6 egg whites
- pinch salt
- cocoa powder for topping
Berry Topping
- 2 cups frozen mixed berries
- 1/4 cup sugar
- 1 tbsp lemon juice
- 1/2 tbsp cornstarch
Cake
Preheat oven to 325 degrees. Grease bottom and sides of a 9 inch springform pan.
Use an electric mixer on medium-low speed to beat egg whites and salt until they just start to foam, about 20 seconds. Set aside.
In a double boiler over medium heat, melt butter and chocolate. Stir constantly until smooth. Remove from heat and whisk in sugar and egg yolks.
Fold in egg whites until just incorporated. Pour into prepared pan. Bake for 37-40 minutes (middle of torte should no longer look wet).
Let cool completely before removing sides of pan.
Once cooled and removed from pan, sift cocoa powder over top of torte.
Berry Topping
In a small sauce pan over medium-high heat, stir together berries, sugar, and lemon juice. Cook for 10 minutes, stirring very frequently, using spoon to squish berries.
Next, w continuously stirring, add cornstarch. Continue to stir and cook until mixture has thickened, about 2 minutes.
Remove from heat. Serve over torte.
