Ingredients

Sausage

  • 1 pound turkey sausage
  • 1 tbsp water
  • 1/2 teaspoon baking soda
  • 2 tbsp maple syrup
  • 2 tbsp dried oregano
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground thyme
  • 1/8 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tbsp olive oil

Eggs

  • 1 cup Egg Beaters
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup onion diced
  • 1/4 cup red bell pepper diced
  • 1 teaspoon fresh minced garlic

Assembly

  • 6 English muffins
  • 6 slices Cheddar cheese

Instructions

Sausage

  • In a small bowl, stir together baking soda and water until baking soda has dissolved in water. Add turkey and stir until well combined. Let sit for 20 minutes.
  • Stir in maple syrup, oregano, garlic powder, thyme, salt, and pepper.
  • Form sausage into 8 patties that are about 4 to 5 inches in diameter and about 1/3 inch in thickness Set patties on parchment or wax paper. NOTE: You only need 6 patties for this recipe, so you can freeze the additional 2 patties for latter.
  • Heat olive oil in a large skillet over medium-high heat. Add patties to skillet. Cook for about 2.5 minutes a side, or until side has browned well. Then flip and brown other side of patty. NOTE: If you cannot fit all the patties on the skillet at once, you will need to add oil before the next addition.
  • Set patties aside, but leave grease in pan to cook eggs.

Eggs

  • Preheat oven to 350 degrees. Grease a 9x9 baking pan or a muffin tin pan with baking spray.
  • Place the skillet you used for the sausage over medium-high heat. Add onion and bell pepper. Saute until softened, about 5 minutes. Add garlic and saute for an additional 30 seconds. Remove from heat.
  • Place vegetables in a small bowl and stir together with eggs, salt, and pepper.
  • Cooking and cutting: For 9x9 baking pan: Pour eggs into greased pan. Bake for 16-18 minutes, or until eggs are cooked through. Let cool for 5 minutes. Flip onto cutting board. Use 3" biscuit cutter to cut out egg rounds. For muffin pan: Pour eggs evenly among 6 greased muffin tin wells. Bake for 18-20 minutes, or until eggs are cooked through. Let cool for 5 minutes before removing.

Assembly and Serving

  • Cut English muffins in half horizontally. Fill each muffin with a sausage patty, baked egg, and slice of cheddar cheese.
  • To eat immediately, place sandwich on microwave safe dish and heat in microwave for 30 seconds.
  • If freezing, wrap each sandwich tightly with plastic wrap. When ready to eat, unwrap and place frozen sandwich on microwave safe dish. Cook on 50% power for 90 seconds. Then, cook on full power for 45 seconds. NOTE: Cook times are for a 1000 watt microwave.
