- 2 cups old fashioned oats
- 1/2 cup chopped pecan and walnut pices
- 3/4 cup roasted pumpkin seeds
- 1/4 cup honey
- 1/4 cup maple syrup
- 1/4 cup coconut oil
- 1/4 cup brown sugar
- 2 teaspoons pumpkin pie spice
- pinch salt
Preheat oven to 350 degrees. Line a baking sheet with parchment paper or silicone baking mat.
In a medium sized bowl, stir together oats, nuts, and pumpkin seeds.
Stir together honey, maple syrup, brown sugar, coconut oil, pumpkin pie spice, and salt in a small bowl. Once mixed, pour over oat mixture.
Spread mixture in an even layer on prepared baking sheet. Bake for 30 minutes, stirring every 10 minutes.
