Ingredients

  • 2 cups old fashioned oats
  • 1/2 cup chopped pecan and walnut pices
  • 3/4 cup roasted pumpkin seeds
  • 1/4 cup honey
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil
  • 1/4 cup brown sugar
  • 2 teaspoons pumpkin pie spice
  • pinch salt

Instructions

  • Preheat oven to 350 degrees. Line a baking sheet with parchment paper or silicone baking mat.
  • In a medium sized bowl, stir together oats, nuts, and pumpkin seeds.
  • Stir together honey, maple syrup, brown sugar, coconut oil, pumpkin pie spice, and salt in a small bowl. Once mixed, pour over oat mixture.
  • Spread mixture in an even layer on prepared baking sheet. Bake for 30 minutes, stirring every 10 minutes.
