Chicken
- 2 pounds ground chicken
- 2/3 cup Kikkoman Teriyaki Sauce (Takumi Collection) divided
Slaw
- 2 cups shredded zucchini
- 1 red pepper cut into thin slices
- 1 cup shredded carrots
- 3/4 cup edamame beans
- 1/3 cup green onions chopped
Sauce
- 1 tablespoon vegetable oil
- 2 tablespoons rice vinegars
- 2 tablespoons apple cider vinegar
- 2 tablespoons soy sauce
- 2 teaspoons sesame oil
- 1 tablespoon brown sugar
- 1/4 teaspoon salt
- 1 teaspoon ginger powder
- 1/4 teaspoon garlic powder
- 1/2 tablespoon sesame seeds
Serving
- Large lettuce leaves for serving butter lettuce or Romaine work well
Slaw
In a small bowl, whisk together all of the sauce ingredients. Add the zucchini, red pepper, carrots, edamame, green onions, and sesame seeds. Toss until all vegetables are coated with sauce. Let sit at least 1 hour before servings. NOTE: I recommended placing the slaw in a colander in a bowl so that the slaw will not sit become soggy.
