Ingredients

Chicken

  • 2 pounds ground chicken
  • 2/3 cup Kikkoman Teriyaki Sauce (Takumi Collection) divided

Slaw

  • 2 cups shredded zucchini
  • 1 red pepper cut into thin slices
  • 1 cup shredded carrots
  • 3/4 cup edamame beans
  • 1/3 cup green onions chopped

Sauce

  • 1 tablespoon vegetable oil
  • 2 tablespoons rice vinegars
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons soy sauce
  • 2 teaspoons sesame oil
  • 1 tablespoon brown sugar
  • 1/4 teaspoon salt
  • 1 teaspoon ginger powder
  • 1/4 teaspoon garlic powder
  • 1/2 tablespoon sesame seeds

Serving

  • Large lettuce leaves for serving butter lettuce or Romaine work well

Instructions

Chicken

  • In a large skillet over medium-high heat, add chicken and 1/3 cup teriyaki sauce. Saute until chicken is cooked through. Stir in additional 1/3 cup teriyaki sauce before serving.

Slaw

  • In a small bowl, whisk together all of the sauce ingredients. Add the zucchini, red pepper, carrots, edamame, green onions, and sesame seeds. Toss until all vegetables are coated with sauce. Let sit at least 1 hour before servings. NOTE: I recommended placing the slaw in a colander in a bowl so that the slaw will not sit become soggy.

Serving

  • Place about 1/3 cup of chicken mixture on a piece of lettuce. Top with desired amount of slaw. NOTE: Best if eaten on day slaw is made.
