Corn Salsa
Delicious, quick, and easy corn salsa. Perfect for tacos.
- 14 ounces frozen corn thawed
- 1/2 red onion chopped
- 3 vine ripe tomatoes chopped
- 2 green onions chopped
- 1 jalapeno no seeds for mild or more to reach desired level of heat
- 1/4 cup cilantro chopped
- juice of 1 lime about 2 tablespoons
- 1 teaspoon sea salt
- black pepper to taste
- 1 tablespoon olive oil
