Corn Salsa

Delicious, quick, and easy corn salsa. Perfect for tacos.

Ingredients

  • 14 ounces frozen corn thawed
  • 1/2 red onion chopped
  • 3 vine ripe tomatoes chopped
  • 2 green onions chopped
  • 1 jalapeno no seeds for mild or more to reach desired level of heat
  • 1/4 cup cilantro chopped
  • juice of 1 lime about 2 tablespoons
  • 1 teaspoon sea salt
  • black pepper to taste
  • 1 tablespoon olive oil

Instructions

  • Mix all ingredients together.
  • Place in fridge for at least 2 hours before serving.
