Honey Lime Chicken with Green Sauce

Ingredients

Chicken

  • 1.5 pounds boneless, skinless chicken breasts (about 3 breasts)
  • 1/3 cup Mazola® Corn Oil
  • 1/4 cup honey
  • zest and juice of one medium lime
  • 4 cloves fresh minced garlic
  • 1/4 cup chopped cilantro
  • 2 tablespoons soy sauce
  • 1/4 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Green Sauce

  • 4 jalapeños seeds removed and diced (leave a few seeds if you want more spice)
  • 1/3 cup chopped cilantro
  • 2 tablespoons fresh grated ginger or ginger paste
  • 4 cloves fresh minced garlic
  • zest and juice of one medium lime
  • 1/2 teaspoon kosher salt add more to taste
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • pinch cayenne pepper
  • 1/2 cup Mazola® Corn Oil

Instructions

Green Sauce

  • Add chopped jalapeños, cilantro, ginger, garlic, lime juice and zest, 1/2 teaspoon kosher salt, chili powder, garlic powder and cayenne pepper to food processor or blender. Puree until minimal chunks of jalapeño remain.
  • Pour in Mazola® Corn Oil. Blend until smooth. Taste and add more salt if desired.

Chicken

  • Cut chicken in half horizontally, or pound chicken so that each piece is about 1/2 inch thick.
  • In a container with lid, mix together Mazola® Corn Oil, honey, lime juice and zest, garlic, cilantro, soy sauce, cumin, salt, and pepper. Add chicken and ensure that all of the chicken is covered in marinade.Let chicken marinate for at least 3 hours (okay to let marinate overnight).
  • Let chicken marinate for at least 3 hours (okay to let marinate overnight).
  • Preheat grill to 500 degrees. Once grill has reached temperature, reduce to 450 degrees and place chicken directly on grill.
  • Cook until chicken has browned and cooked through (no longer pink in the center), about 3 to 4 minutes per side.
  • Serve chicken topped with green sauce.
