Grilling Season
As soon as the weather begins to turn warm, I am ready to be outside! I want to cook on the grill, eat on the patio, play in the yard, and watch my children run around until they’ve tired themselves out.
In Maryland, I consider April through October to be grilling season. And grilling season makes my heart happy. I suppose I do need to have an honest moment here though when I say “I want to cook on the grill”, I mean I want to prepare the food, tell my husband what a great job he’s doing while he grills it, and then serve the grilled food, and take full credit for the fabulous meal.
One of the reasons I love grilled food is that it tastes SO good. Additionally, I love grilled food because it’s easy to put together and quick to cook. An all around win.

Grilled Chicken with Green Sauce
Chicken
This recipe uses boneless, skinless chicken breasts, as they are a light, better-for-you protein.
The keys to having juicy, grilled chicken breasts are:
- Make sure that the chicken breasts are about 1/2 inch thick. If you have thick chicken breasts you can either pound them or cut them in half horizontally.
- Turn the grill to 500 degrees Fahrenheit. Once it reaches temperature, turn it down to 450 degrees Fahrenheit and place your chicken on the grill.


Honey Lime Marinade
The chicken breasts are marinated for at least 3 hours in a DELICIOUS combination of:
- Mazola® Corn Oil
- Honey
- Fresh Lime
- Fresh Garlic
- Cilantro
- Soy Sauce
- Cumin
- Salt
- Black Pepper

While the chicken is marinating, it’s time to make the green sauce. The sauce uses the following ingredients:

- Jalapenos
- Fresh Lime
- Fresh Garlic
- Cilantro
- Grated Ginger
- Garlic Powder
- Kosher Salt
- Cayenne Pepper
- Chili Powder


Again, the neutral flavor of the Mazola® Corn Oil allows the flavors of the sauce to shine! Prepare the sauce at least 2 hours before serving as it tastes best when it has some time for the flavors to meld together.
If you have concerns about the jalapeños making the sauce too spicy, simply remove all of their seeds. I promise! This is what I do when I make the sauce for my spice-sensitive children, and they don’t complain at all! And, if you do enjoy a spicy kick, make sure to add a few jalapeño seeds to the sauce.
The ginger in the sauce is a wonderful complement for the honey-lime chicken marinade. For the ginger, you can either grate fresh ginger, or purchase pre-packaged ginger paste.

Honey Lime Chicken with Green Sauce
Ingredients
Chicken
- 1.5 pounds boneless, skinless chicken breasts (about 3 breasts)
- 1/3 cup Mazola® Corn Oil
- 1/4 cup honey
- zest and juice of one medium lime
- 4 cloves fresh minced garlic
- 1/4 cup chopped cilantro
- 2 tablespoons soy sauce
- 1/4 teaspoon cumin
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Green Sauce
- 4 jalapeños seeds removed and diced (leave a few seeds if you want more spice)
- 1/3 cup chopped cilantro
- 2 tablespoons fresh grated ginger or ginger paste
- 4 cloves fresh minced garlic
- zest and juice of one medium lime
- 1/2 teaspoon kosher salt add more to taste
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
- pinch cayenne pepper
- 1/2 cup Mazola® Corn Oil
Instructions
Green Sauce
- Add chopped jalapeños, cilantro, ginger, garlic, lime juice and zest, 1/2 teaspoon kosher salt, chili powder, garlic powder and cayenne pepper to food processor or blender. Puree until minimal chunks of jalapeño remain.
- Pour in Mazola® Corn Oil. Blend until smooth. Taste and add more salt if desired.
Chicken
- Cut chicken in half horizontally, or pound chicken so that each piece is about 1/2 inch thick.
- In a container with lid, mix together Mazola® Corn Oil, honey, lime juice and zest, garlic, cilantro, soy sauce, cumin, salt, and pepper. Add chicken and ensure that all of the chicken is covered in marinade.Let chicken marinate for at least 3 hours (okay to let marinate overnight).
- Let chicken marinate for at least 3 hours (okay to let marinate overnight).
- Preheat grill to 500 degrees. Once grill has reached temperature, reduce to 450 degrees and place chicken directly on grill.
- Cook until chicken has browned and cooked through (no longer pink in the center), about 3 to 4 minutes per side.
- Serve chicken topped with green sauce.
