Asian Pork Meatball Sandwich. Pork meatballs with an Asian flare, topped with sauted onions and in a sub roll. Perfect for an easy but satisfying lunch or dinner.
Last week I was craving some meatballs. Actually, as I’m sitting here editing photos, I’m realizing we’ve had meatballs about five times over the last couple weeks…. It’s been a good couple of weeks.
My husband is one of those people who eats to live. He likes good food, but it’s not uncommon for him to go through his day, forgetting to eat, and then come home famished. Often my meals have a lot of vegetables, so they aren’t always calorie rich, or filling to a man who is counting on one meal for his daily sustenance. A few years ago when I fell in love with SkinnyTaste, he joked that he wished I would find a website called FullTaste.
So during this meatball run, I wanted to make my husband something that would be filling. I decided sandwiches were the way to go. I loved the sauce for these Sweet and Salty Pork Chops, so I decided to incorporate it into a pork meatball. It was a good choice.
These Asian pork meatball sandwiches are filling, but not unhealthy either. They were a hit for our whole family. Our one year old crushed as meany meatballs as I ate each meal.
