Coconut Milk Rice
I love coconut milk. I think it is one of the tastiest things you can add to a meal. This past week I was day dreaming about coconut milk (yes, that’s real, I day dream about food) and thought, “I should start using it to make rice for Thai dishes!” It’s such an easy thing to do, but truly elevates an at home meal.

One of my personal favorite things about coconut milk: it’s dairy free. Dairy and I don’t always see eye to eye, and I have a number of friends who either they or their children are the same way, so it’s always nice to have some creamy, dairy free alternatives.

Curry Meatballs with Coconut Milk
In the spirit of “the more coconut milk, the better”, I made a coconut milk curry sauce for Thai curry meatballs. Y’all, this dish was freaking good. I’m looking at these photos and wishing I still had leftovers. This dish is savory, fresh, and filling. And overall, fairly healthy. I highly recommend you make it asap.


Curry Meatballs with Coconut Rice
Ingredients
Meatballs
- 1 pound ground chicken
- 1 tbsp fresh ginger grated
- 1 tbsp red curry paste
- 1/2 teaspoon ground coriander
- 3 cloves garlic
- 1/2 cup dry Panko breadcrumbs
- 2 tbsp cilantro chopped
- 2 tbsp soy sauce
- 1 tbsp fresh lime juice
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Curry Sauce
- 1 tbsp vegetable oil
- 2/3 cup shredded carrots
- 3 tbsp red curry diviced
- 3 cloves garlic
- 1/2 tbsp fresh ginger grated
- 1 13.6 ounce can full fat coconut milk
- 1 cup chicken broth
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt
- 1 tbsp sugar
- 2 tbsp soy sauce
- 2 tbsp lime juice
- 1 red pepper sliced thinly
- 1 cup snow peas
Rice
- 2 cups Jasmine Rice
- 1 13.5 ounce can can full fat coconut milk
- 1.5 cups water
- 1/2 teaspoon salt
Instructions
Meatballs
- Preheat oven to 350 degrees. Line large baking sheet with parchment paper or baking mat.
- In a large bowl, mix together all meatball ingredients. Form into ~1 tbsp sized balls. Place balls on prepared baking sheet.
- Bake for 13 minutes.
Sauce
- Heat oil in a large pot over medium heat. Add carrots and 2 tbsp of red curry, and cook for 2-3 minutes.
- Add garlic and ginger. Stir for about 30 seconds.
- Stir in coconut milk, chicken broth, pepper, salt, sugar, soy sauce, lime juice, and 1 tbsp red curry. Once well combined, add in meatballs and simmer uncovered for 10 minutes.
- Add in red pepper and snow peas. Simmer for another 5 minutes.
Rice
- In a medium sized sauce pan over medium-high heat, combine coconut milk, water, and salt, and bring to a boil.
- Once boiling, stir in rice. Reduce to a simmer and cover. Simmer for 15 minutes or until liquid absorbed.
Serving
- Serve meatballs and sauce over rice. Garnish with cilantro and lime if desired.
