Andouille sausage is fabulous. It’s one of those things that just works on its own. You can take it out of the package, put it with just about anything, and have a delicious meal. It also has just the right amount of spice. It adds flavor without being so hot that my kids yell about it.
I would like to say something now …. I just wrote all those sentences without saying love. I wanted so badly to say “I love Andouille sausage”, but my editor (aka my husband), says that I write love too much in these posts. I have taken his advice to heart, and will be cutting back. But I want to say something first …. I love a lot of things. Life is good. I see no reason that anyone should hold back their affection for food.
Back to the dinner. One pot meals make me happy. If I can prepare a meal in one pot that means; a.) I have much less to clean, b.) as with this recipe, it’s probably quick to prepare, and c.) I have more time to play with my kids (i.e. change diapers and snuggle during Paw Patrol).
Another thing about one pot meals; they’re generally tasty. Put all those delicious ingredients in one dish, and it’s sure to be a hit. This Andouille sausage chicken and rice was a hit for my whole family. In addition, my dear friend from South Carolina came to visit the weekend I made this, and she thoroughly enjoyed it as well. So 5 out of 5 people who ate this recommend you make it and eat it asap.

Andouille Sausage Chicken and Rice
Ingredients
Chicken
- 1.5 pounds chicken breasts cut into bite sized pieces
- 1/2 teaspoon chili powder
- 1 teaspoon lemon herb seasoning
- 1/2 teaspoon garlic powder
- salt and pepper to taste
- 1 tbsp olive oil
Rice, Vegetables, and Andouille Sausage
- 1 tbsp olive oil
- 1 onion diced
- 4 cloves garlic
- 1 green pepper diced
- 1 yellow pepper diced
- 6 ounces andouille sausage I used two links cut into about 1/4" slices
- 2 cups long grain white rice
- 1.25 teaspoons saffron
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 teaspoon paprika
- 4 cups chicken broth
- 1 cup chunky salsa
Instructions
Chicken
- In a small bowl mix together chili powder, lemon herb seasoning, garlic powder, salt, and pepper. Add chicken and stir until chicken is thoroughly coated.
- Heat olive oil in a large pot over medium-high heat. Add chicken and cook until pieces are almost cooked through, about 5 minutes.
- Remove chicken from pot and set aside.
Rice, Vegetables, and Andouille Sausage
- Heat another tbsp of olive oil in the same pot. Then, add onion, garlic, green pepper, and yellow pepper. Saute for about 3 minutes.
- Add andouille sausage and saute for another 3 minutes.
- Then, add rice, saffron, cumin, oregano, paprika, chicken broth, and salsa. Stir until well mixed.
- Add chicken with it's juices and stir again until well combined.
- Cover pot and reduce heat to low. Simmer for 30 minutes (or until liquid is absorbed), stirring halfway through cooking time.

Tried this recipe last night and it was very good.
Saw no reviews, but the ingredients looked good, so went for it.
Nice flavors and a touch of spice. Cajun like in a way and will surely try again.
