Back in the days when I used to go out to eat, the days before my kids made it way easier to eat at home, my husband and I used to go to Chipotle on a regular basis. Chipotle still feels like it’s mine, even though it’s probably been four years since I’ve stepped foot in one. Well, I have been ones at the airport, but that doesn’t really count as ‘foot in one’. In any case, their burrito bowls are my fave. Not because I have a health thing agains tortillas, but because I want all the cilantro lime rice I can get.
I Want to Taste the Lime
I have tried a few cilantro lime rice recipes in the past, and was consistently underwhelmed. I want to taste the lime! And the salt! I want to feel like I’m eating a margarita turned into rice. Well maybe not that far, but I want some flavor. This rice my friends, it has that flavor. This cilantro lime rice takes about 5 minutes to put together, but elevates your at home Mexican meals to the next level. It’s the little things.
Cilantro Lime Rice
This cilantro lime rice pairs perfectly with the barbacoa beef recipe. Put a little Restaurant Style Blender Salsa or Corn Salsa on top, and you’re in business.

Cilantro Lime Rice
Ingredients
- 1.5 cups long grain white rice
- 1 tbsp butter
- 3 cups water
- 3/4 teaspoon salt
- zest of 1/2 lime
- juice of 1 lime
- 1/2 cup cilantro chopped finely and packed
Instructions
- In medium sauce pan over medium heat, melt butter. Add rice and saute for about 1 minute, until lightly browned.
- Stir in water, salt, and lime zest. Bring to a boil. Then, cover, and reduce to a simmer. Cook until water is absorbed, about 11-13 minutes.
- Stir in cilantro and lime juice.
