Cilantro Lime Rice

Cilantro Lime Rice. This rice couldn’t be easier to make, and it takes your homemade rice to the next level. It’s like having a Chipotle in your kitchen.

cilantro lime rice

Back in the days when I used to go out to eat, the days before my kids made it way easier to eat at home, my husband and I used to go to Chipotle on a regular basis. Chipotle still feels like it’s mine, even though it’s probably been 4 years since I’ve stepped foot in one. Oh wait, the airport, yes I have been at the airport, but that doesn’t really count as ‘foot in one’. In any case, their burrito bowls are my fave. Not because I have a health thing agains tortillas, but because I want all the cilantro lime rice I can get.

I have tried a few cilantro lime rice at home recipes before and have been underwhelmed. I want to taste the lime! And the salt! I want to feel like I’m eating a margarita turned into rice. Well maybe not that far, but I want some flavor. This rice my friends, it has that flavor. This cilantro lime rice takes about 5 minutes to put together, but elevates your at home Mexican meals to the next level. It’s the little things.

This pairs perfectly with the barbacoa beef recipe. Put a little Restaurant Style Blender Salsa or Corn Salsa on top, and you’re in business.
