Kids and Vegetables

I have a tough time getting my kids, ages 3 and 5, to eat vegetables. They will eat them, but it’s a battle.

Prime example: Last night we had sweet potato casserole. My daughter took one, small bite of sweet potato casserole, spit it out across the table and announced, “I don’t like it!” I told her she needed to have another bite …. same thing happened again.

Eventually, she went to bed and told me would rather be hungry than eat sweet potato casserole ever again. I’m sure many of you understand these battles. So, if there is a vegetable that my kids eat with minimal argument, I’m all for it.

Air Fried Green Beans

Fortunately, there are a few vegetables that my kids will eat, like these Air Fried Green Beans. Deep down, I think they actually like them. So needless to say, they have become a weekly staple in my house.

Green Beans

The type and amount of green beans you use for this recipe is important.

  1. Use fresh green beans. No canned, no frozen, no old, yucky beans.
  2. When I say 24 ounces, I mean 24 ounces of beans AFTER the strings and ends of the beans have been removed.
  3. If you use less than 24 ounces, you need to adjust the spices to compensate.

Spices

These Air Fried Green Beans are seasoned with:

  • 1 1/2 teaspoons seasoned salt
  • 1/4 teaspoon salt
  • 1/4 to 1/2 teaspoon black pepper, depending on preferred spice level
  • 1 teaspoon garlic powder

If you use less than the recommended amount of green beans, you need to adjust the spices accordingly. If you do not, your beans will likely be too spicy and too salty…trust me, I have made this mistake.

Oil

Make sure that all of the green beans are coated in the olive oil. This is what allows the beans to get crispy!

Generally I toss the beans in the olive oil first, then sprinkle them with the spice mix.

Air Fryer Brand

In my experience, different air fryer brands cook differently. I use a Cuisinart Air Fryer Toaster Oven. For this appliance, I cook my beans at 375 degrees for 8-9 minutes, flip them, and then cook them for an additional 8-9 minutes.

Use the time and temperature as a guideline and adjust as needed for your own air fryer.

Ingredients

  • 24 ounces green beans with strings and ends removed 24 ounces is weight of green beans AFTER strings and ends are removed
  • 1/4 cup olive oil
  • 1 1/2 teaspoons seasoned salt
  • 1/4 teaspoon salt
  • 1/4-1/2 teaspoon black pepper 1/2 teaspoon for a more spicy kick
  • 1 teaspoon garlic powder

Instructions

  • In a small bowl, stir together seasoned salt, salt, pepper, and garlic powder.
  • In a large bowl, toss green beans with olive oil. Then add spices and toss again.
  • Spread green beans in a single layer in an air fryer basket. Depending on the size of your air fryer basket, you may need to cook green beans in several batches.
  • Cook at 375 degrees for 8-9 minutes. Toss beans and cook again for 8-9 minutes, or until beans are crispy and lightly browned.

My go-to way of making green beans. When I cook these in batches, I have to cook enough to take care of the snacking I plan to do between batches. Guests love them, too!
