Lemon Blueberry Granola. This granola is easy to make, healthy, and amazing. Perfect with milk for breakfast or to serve on yogurt!
Being a parent is hard. Really hard. Some days I think “These are the best human beings on the planet!” and other days I think “Am I raising demons?” I’m sure everyone reading gets that. Either you’re a parent, and you can relate to the parenting aspect, or you can remember being a demon child yourself. Maybe not, but I’m telling myself you can all relate, because that gets me though.
A few years ago my husband was at home watching my son, and apparently my son was having a rough afternoon. I texted my husband to ask how things were going, and he said “Our son must have been in Syria this morning …. training”. In other words, he was terrorizing everything.
Last Tuesday was one of those real rough, terrorizing days. My son woke up from his nap and was angry about life. I’m pretty sure he was just tired, but at three and a half, he doesn’t understand that …. he only understands that he’s angry. And at three, he can’t say, “Mom, I’m still tired and not really happy about it”, at three, he yells about snacks.
At first, he was angry because he said I put the peanut butter on the wrong side of his graham cracker. I changed the side he got angry because he said I had taken some of the peanut butter off. Then, he just screamed “I WANT GRANOLA!”. I know, it’s a hard thought process to follow. BUT, I had the stuff to make granola, and figured that was something I could handle. So, he and I made this lemon blueberry granola.
The granola making process went surprisingly well. He had a blast helping mix and pour, and it got his mind off his mood. Plus, we both love granola, so we were able to bond over our afternoon snack.
This lemon blueberry granola was inspired by a bag of granola I got a few months ago at a grocery store near my house. It was some sort of lemon blueberry variety that I loved, but haven’t been able to find since. This creation was just as good, if not better than the bag I bought, and included all the tasty things I love in granola. It pairs perfectly with Instant Pot Yogurt!

Lemon Blueberry Granola
Ingredients
- 1 1/4 cups old fashioned oats
- 1 cup steel cut oats
- 2 tbsp hemp seeds
- 2 tbsp flax seeds
- 1/2 cup dried sweetened blueberries
- zest of 1 lemon
- juice of 1 lemon
- 2 teaspoons vanilla extract
- 1/4 teaspoon cardamom
- 1/4 teaspoon salt
- 1/4 cup coconut oil
- 1/4 cup maple syrup
- 2 tbsp honey
Instructions
- Preheat oven to 300 degrees. Line a baking sheet with parchment paper or silicone mats.
- In a small bowl, whisk together lemon zest, lemon juice, vanilla, cardamom, salt, coconut oil, maple syrup, and honey. Stir in all oats, seeds and blueberries.
- Spread on prepared baking sheet. Bake for 45 minutes, stirring every 15 minutes.
