I adore the taste of most cold pasta salads. They’re filling, they tend to have a great variety of flavors, and they feel healthier than a lot of dishes. My husband though, he’s not a fan of cold pasta. I try to only make food that all four members of my family will eat, so usually, pasta salad doesn’t make the cut.
Since my husband doesn’t like cold pasta, I assumed that he didn’t like cold grain salads either. But, a few weeks ago, I learned otherwise. We were driving home from the beach and he mentioned that years ago, a friend of ours used to take a couscous salad to events, and that he really enjoyed it. I was pumped!
I immediately texted my friend Becky, who had made said couscous salad, and asked her what was in it. She couldn’t remember proportions, but she gave me a good gist of what she did. So, we all have Becky to thank for this recipe.
This fresh herb and vegetable couscous salad has all that I love about pasta salads: it’s fresh, filling, tasty, and healthy. The perfect dish to take to a party, use as a side, or have for an appetizer!
Couscous tossed with fresh herbs, vegetables, and feta cheese, and finished with a balsamic dressing. Light and deliciously flavorful!
- 1 cup couscous
- 1 cup water
- 1/2 tbsp butter
- 1/4 teaspoon salt
- 2 tbsp fresh basil chopped
- 2 tbsp fresh oregano chopped
- 1/2 cucumber diced into ~1/4" chunks
- 1 cup baby tomatoes cut into fourths
- 2 tbsp balsamic vinegar
- 2 tbsp olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup feta cheese crumbles
In a medium sized sauce pan over high heat, bring water to a boil. Once boiling, stir in couscous, butter, and salt. Cover and remove from heat. Let sit for 10 minutes, then fluff couscous.
In a medium sized bowl, stir together couscous, basil, oregano, cucumber, and tomatoes.
Mix together balsamic vinegar, olive oil, salt, and pepper in a small bowl.
Pour balsamic mixture over couscous and stir well. Finally, stir in feta cheese.
