Pasta Salad
I am a big fan of pasta salads. They’re filling, tend to have a great variety of flavors, and are usually on the healthy side. My husband though, he is not a fan of cold pasta. Since I try to only make food that all four members of my family will eat, pasta salad does not generally make it into the meal rotation.
I have assumed that since cold salads with grains are similar to pasta salad, my husband wouldn’t like them, and have stayed away from making them. But then a few weeks ago, something exciting happened: We were driving home from the beach and my husband mentioned that years ago, a friend of ours used to take a couscous salad to events, and that he really enjoyed it. I was so pumped!

Fresh Herb and Vegetable Couscous Salad
As soon as I learned about this couscous salad, I immediately texted my friend Becky, who had made said salad, and asked her what was in it. She couldn’t remember proportions, but gave me a good gist of what she did. So, we all have Becky to thank for this recipe.

This fresh herb and vegetable couscous salad has all that I love about pasta salads: it’s fresh, filling, tasty, and healthy. The perfect dish to take to a party, use as a side, or have for an appetizer!


Fresh Herb and Vegetable Couscous Salad
Ingredients
Couscous
- 1 cup couscous
- 1 cup water
- 1/2 tbsp butter
- 1/4 teaspoon salt
Salad
- 2 tbsp fresh basil chopped
- 2 tbsp fresh oregano chopped
- 1/2 medium sized cucumber diced into ~1/4" chunks, about 1/2 cup
- 1 cup baby tomatoes cut into fourths or halves
- 2 tbsp balsamic vinegar
- 2 tbsp olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup feta cheese crumbles
Instructions
Couscous
- In a medium sized sauce pan over high heat, bring water to a boil. Once boiling, stir in couscous, butter, and salt. Cover and remove from heat. Let sit for 10 minutes, then fluff couscous.
Salad
- In a medium sized bowl, stir together couscous, basil, oregano, cucumber, and tomatoes.
- Mix together balsamic vinegar, olive oil, salt, and pepper in a small bowl.
- Pour balsamic mixture over couscous and stir well. Finally, stir in feta cheese.
