Regular Ole’ Burgers
My husband and I both love to cook and experiment with different cooking techniques and various flavors. So, we’ve made a point of trying to give our kids a wide variety of foods with different tastes.
For the most part, our kids are pretty good about trying new foods. I’m not saying there aren’t complaints, and sometimes really loud complaints, but they’ll eventually try new things.
I made Chimichurri Burgers a while back, and to begin with, both of my children were apprehensive. Something about seeing green upset them. But finally, they tried them, and my son loved them. He started asking them for them on a regular basis.

During the time that he really wanted them, we had some friends over for dinner. I told my kids that I would make burgers, and they were excited. However, since the family coming had children, and I didn’t know what they would eat, I decided to make regular ole’ burgers. My son was not pleased.
My son had multiple complaints about the regular burgers, saying they didn’t have enough flavor, and he wanted Chimichurri Burgers. I was simultaneously happy, and annoyed. On the one hand he wanted something unique, but on the other hand, he’s five years old and I made his dinner while he played. I think you all understand the conflicting emotions.

These Chimichurri Burgers are a family favorite in my house. Here are a few tips to help ensure success:
What is the best ground beef for burgers?
70/30 will give you the juiciest, most flavorful burgers. Yes, yes, it has more fat, but y’all, that is what makes it so tasty.
If you want to go on the less fat side, you can use 80/20 ground beef, but I do not recommend going below 20% fat. I love cutting down on fat and calories when I can, but there is no point in eating a burger if it’s dry and flavorless.
How do I make chimichurri sauce?
I use the following ingredients for my chimichurri sauce:
- fresh parsley
- fresh cilantro
- fresh oregano
- red onion
- fresh garlic
- red wine vinegar
- fresh lemon juice
- olive oil
- kosher salt
- black pepper
- red pepper flakes
Fresh is best! Do not substitute with dried herbs. It’s not the same.
Hand chop the ingredients, do not use a blender or food processor: Using a blender actually changes the taste. Don’t do it. Finely hand chop all of the ingredients for the best texture and flavor.

How do I serve chimichurri burgers?
There are multiple ways! Consider:
- on a hamburger bun
- in a lettuce wrap
- ketchup on top
- topped with melted swiss cheese
- chimichurri sauce
- lettuce, tomato, and onion
Basically, if it’s good on a regular burger, it works with a chimichurri burger!

Chimichurri Burgers
Ingredients
Burgers
- 1 pound ground beef I recommend 70/30 or 80/20
- 1 tablespoon water
- 1 teaspoon cornstarch
- 1/4 medium sized red onion diced
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 2 tablespoons fresh parsley chopped finely
- 2 tablespoons fresh cilantro chopped finely
- 1 tablespoon fresh oregano chopped finely
- 2 cloves fresh minced garlic
- 1 tablespoon red wine vinegar
- 1/8 teaspoon cayenne pepper
- 1/2 teaspoon lemon zest
Chimichurri Sauce
- 1/4 to 1/2 teaspoon kosher salt
- 1/2 cup fresh parsley chopped and packed
- 1/4 cup fresh cilantro chopped and packed
- 1/2 tablespoon fresh oregano
- 1/4 medium sized red onion diced
- 1 clove fresh minced garlic
- 1 tablespoon red wine vinegar
- 1 tablespoon fresh lemon juice
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1/4 cup olive oil
For Serving
- hamburger buns
- swiss cheese slices
Instructions
Burgers
- Stir together water and cornstarch until cornstarch is dissolved. Mix together with ground beef and let sit for 15-20 minutes.
- In bowl with beef, stir in onion, salt, pepper, parsley, cilantro, oregano, garlic, vinegar, cayenne, and lemon zest.
- Shape into round hamburger patties that are about 3/4 inch in thickness and 3-4 inches in diameter.
- Grilling: Turn grill to 500 degrees. Once grill reaches 500, turn heat down to 450 and place hamburgers on grill. Brown, flip, and brown other side.Stove Top: Heat pan (ideally cast iron grilling pan) over medium high heat. Place burger on pan and cook until browned, then flip and brown other side.
Chimichurri Sauce
- Starting with 1/4 teaspoon kosher salt, stir together the rest of the chimichurri sauce ingredients. Taste, and if desired, add more kosher salt. Do NOT use blender, this is best when ingredients are hand chopped and stirred.
Serving
- Top burgers with melted swiss cheese, if desired, and chimichurri sauce. Serve in a lettuce wrap or hamburger bun.
