Welcome to Day 9 of SugarSpicesLife 12 Days of Holiday Treats! This is a 12 day recipe series of cookies, candies, and other holiday goodies! Today’s recipe is for Oatmeal Peanut Butter Chocolate Chip Cookies.
This week is the third and final week of (specifically) holiday themed recipes! I will be sharing 4 recipes this week and will then put up a summary post.
Oatmeal Peanut Butter Chocolate Chip Cookies
Name
The name for this recipe is entirely too long. But I think that each component is so delicious and important, that I can’t cut any of them out of the name.
And if I change the name to something like, “Yummaroos”, no one will know what they are. So, I’m leaving it.

Peanut Butter
For this recipe I use Jif Creamy Peanut Butter. You can use any brand of smooth peanut butter that you want, but I personally love Jif.
Every once in a while I’ll get a message from someone saying that they made a recipe of mine with natural peanut butter and had issues. (**Editor’s note: Weird. Thanks for the input by the way. It’s like telling me you put diesel in your car, and there were problems. They’re both fuel…but different.) Would natural peanut butter work for these cookies? I don’t know, haven’t tried it. But I recommend you just stick with regular.
Oats: Old Fashioned vs Quick
Does it matter which oats you use in these cookies, old fashioned or quick? Yes, but not a huge difference.
Old fashioned oats are larger, and take longer to cook. They lead to a chewier cookie than quick oats.
Quick oats are chopped up, and cook quicker. They will marke for a less chewy cookie with a more uniform consistency.
For these cookies, I prefer them to be chewier, so I use old fashioned oats. (**Editor’s note: there’s nothing more “old fashioned” on earth, than oats)

Chocolate
These cookies have 3/4 cup semi-sweet chocolate chips and 3/4 cup milk chocolate chips. This ratio gives the best of a bunch of chocolate worlds: chunks, bits, milk, and semi-sweet varieties.
However, you should make these what you like! Maybe consider dark chocolate, white chocolate, or candy bits!
Baking
When it comes to cookies, there are two things I almost always do, and I recommend you try for these cookies:
- Bake on a baking sheet lined with parchment paper or a silicone baking mat. And ideally an air bake sheet. This helps prevent burned bottoms.
- Chill the dough for at least an hour. This leads to fluffier cookies that don’t spread too much.

These Oatmeal Peanut Butter Chocolate Chip Cookies are delicious treats that will definitely satisfy your cookie cravings!

Oatmeal Peanut Butter Chocolate Chip Cookies
Ingredients
- 1 cup unsalted butter softened
- 1 cup sugar
- 1/2 cup light brown sugar gently packed
- 1 cup smooth peanut butter
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 1/2 cup all purpose flour
- 1 teaspoon cornstarch
- 1 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cup old fashioned oats
- 3/4 cup semisweet chocolate chunks
- 3/4 cup milk chocolate chips
Instructions
- Use electric mixer fit with paddle attachment to beat butter, sugar, and brown butter until lightened and fluffy, about 2 minutes.
- Mix in peanut butter and vanilla until well combined. Add eggs, one at a time, scraping down sides as needed.
- In a medium sized bowl, whisk together flour, cornstarch, baking soda, and salt. Add to butter mixture and mix until combined.
- Stir in oats, chocolate chunks, and chocolate chips until evenly dispersed. Place dough in refrigerator for 1 hour.
- Preheat oven to 350 degrees. Use ungreased baking sheet, or baking sheet lined with silicone baking mat or parchment paper.
- Form dough into ~1 tablespoon sized balls. Place on baking sheet at least 2 inches apart.
- Bake for 10-12 minutes, or until golden brown.
