Water Slide
This summer my husband and I decided to purchase our kids an inflatable water slide. We thought it would be a fun way for them to get some wiggles out in the back yard, and we just like watching our kids have fun. Everyone who has children knows where this is going … they were interested in the water slide for about a day. They moved on to things like, “I found this shovel and want to see if I can dig a hole bigger than me.” Awesome.
However, any time we have friends with children over to the house, and they want to play with the water slide, our kids magically become interested again.

Desserts for Kids
This past weekend we had our friends Ben and Whitney over with their children. Their kids wanted to play on the water slide, so ours were once again happy to use it. While the kids played, the adults hung out and made dinner.
I wanted to make a dessert, so I asked my friend Whitney about her kids’ dessert preferences. She suggested I make something with chocolate. Since it’s summer and we were grilling, I thought a s’mores dessert made a lot of sense.


Skillet S’mores Brownie
I wanted to make a dessert that tasted like a giant s’more. So, I made a rich, fudgy brownie and cooked it on a graham cracker crust. Finally, I topped it with marshmallows that I roasted until they turned golden brown. It turned out perfectly.
This Skillet S’mores Brownie is one of my new, favorite desserts. Here are a few tips for when you make it:
- The brownie does not have a leavening agent as I wanted it to be fudgy and feel similar to a melted piece of Hershey bar. This is not a cake like brownie – fudgy is the goal here!
- As the brownie is rich, I topped the brownie with a chocolate ganache syrup. However, if you want candy pieces, you can stir in bits of cut up Hershey bar with the marshmallows and graham cracker before you pour it over the half cooked brownie.
- I made this in a cast iron skillet. If you do not have a cast iron skillet, you can use a 9×9 baking pan, but you will likely need to adjust your cooking time.


Skillet S’mores Brownie
Ingredients
Graham Cracker Crust
- 6 tbsp butter melted
- 1 cup graham cracker crumbs
Brownie
- ½ cup flour
- ½ cup cocoa powder
- ¼ teaspoon salt
- ½ cup butter melted
- ½ cup sugar
- ½ cup light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
Topping
- 2 cups mini marshmallows
- 2 large graham crackers crushed into small pieces
- 1/3 cup semi-sweet chocolate chips
- ¼ cup heavy whipping cream
Instructions
Graham Cracker Crust
- Preheat oven to 350 degrees.
- In a small bowl, stir together melted butter and graham cracker crumbs. Press into the bottom of a 12” cast iron skillet.
Brownie
- Stir flour, cocoa powder, and salt. Add melted butter, sugar, brown sugar, eggs, and vanilla extract. Stir until combined, but a few clumps remain.
- Pour over graham cracker crust.
- Bake in preheated oven for 15 minutes.
Topping
- Remove skillet from oven. Sprinkle marshmallows and broken graham cracker over brownie.
- Return to oven and bake for an additional 15 minutes.
- Remove from oven and let cool for about 10 minutes.
- While brownie is cooling, make sauce. Heat whipping cream in a microwave safe bowl until boiling, about 1 minute.
- Place chocolate chips in a heat safe bowl. Pour heated whipping cream over chips. Let sit for about 5 minutes. Then, stir until smooth.
- Drizzle chocolate over top of marshmallows and graham crackers.
