Easy Homemade Ice Cream. This homemade ice cream is creamy, full of fruit, addictively delicious, and lactose-free!
I love ice cream. Adore ice cream. Think about it all summer long. However, traditional ice cream doesn’t agree with me. Sometimes, I’ll have a few bites, and I’ll be happy while I’m eating it, but later when I have a belly ache, I will not be pleased with my prior decision. Usually though, I just go for dairy or lactose-free. But to be honest, I’m often annoyed with my choices. I don’t like the lack of flavor options, and feel like they’re often watery or icy. It ends up making me mad about what I’m missing.
My son has inherited my love of all sweets, especially ice cream. He’s been asking for it a lot recently. Growing up, my family would make homemade ice cream in the summer, and I’ve been thinking about how much my son would like homemade ice cream. But, he’d be the only one in my house to eat it, and it doesn’t make sense to make that much ice cream for a 3 year old. But then something amazing happened … I made Instant Pot Yogurt, and discovered Fairlife milk, which is lactose free, and delicious. I realized I could make ice cream with tasty lactose-free milk that my son and I would both eat and love! No, I don’t get a dime from Fairlife – they don’t have a clue who I am, I just like their milk.
I wanted a creamy ice cream, that was sweetened with something natural, like honey, and had fruit. So, this easy homemade ice cream came to be. This recipe makes four generous servings, but could easily be doubled. And y’all, it is amazing. I put the extra in the freezer, and it’s good scooped later, but nothing can compare to that soft serve that comes out of the machine.

Easy Homemade Ice Cream
Ingredients
- 1.5 cups Fairlife whole milk
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 1/3 cup fresh blueberries cut in half
- 5 large strawberries cut into small pieces
Instructions
- Whisk together milk, honey, and vanilla extract.
- Stir in strawberries and blueberries.
- Place mixture in ice cream maker and use per manufacturer instructions (in my machine took 1 hour to be a soft serve consistency).

I think there is a typo on step 2. In lieu of vanilla, should be blueberries. I think!
