Easy Homemade Ice Cream

I love ice cream. Adore ice cream. Think about it all summer long. However, traditional ice cream doesn’t agree with me. Sometimes, I’ll have a few bites, and regret it. But usually, I go for dairy or lactose-free. And to be honest, I’m usually annoyed with my choices. They feel like they’re just trying to be something they’re not. I don’t like the lack of flavor options, and feel like they’re often watery or icy. It ends up making me mad about what I’m missing.

My son has inherited my love of all sweets, and especially ice cream. He’s been asking for it a lot recently. My family always made homemade ice cream in the summer when I was growing up, and I’ve been thinking about how much my son would like it. But, he’d be the only one in my house to eat it, and it doesn’t make sense to make that much ice cream for a 3 year old. But then something amazing happened … I made Instant Pot Yogurt, and discovered Fairlife milk, which is lactose free, and delicious. I realized I could make ice cream with tasty lactose-free milk that my son and I would both eat and love!

I wanted a creamy ice cream, that was sweetened with something natural, like honey, and had fruit. So, this ice cream came to be. This recipe makes four generous servings, but could easily be doubled. And y’all, it is amazing. I put the extra in the freezer, and it’s good scooped later, but nothing can compare to that soft serve that comes out of the machine. Yummmmmmm.
