Cookie Dough

Everyone knows you aren’t supposed to eat raw cookie dough, but I love it. I’m pretty sure most people would say they love eating it too if they’re being honest. It’s just so gooey and wonderful, and even tastier than cookies.

In 5th grade I was in an after school club where each person’s parents would take turn bringing snacks. One day, my friend Jill’s dad brought in a thing of cookie dough. One of the teachers said, “we don’t have an oven,” to which he replied, “yeah I wasn’t planning on them being baked.”

All of the kids were ecstatic. We sat there with spoons, eating cookie dough out of the refrigerated package, talking about how Jill’s dad was the coolest ever.

Cookie Dough Brownies

Now that I’m older and have to set an example for my kids, I don’t eat raw cookie dough. At least not if anyone is watching….

I explained to my kids numerous times that eating raw egg or raw flour can make them sick, and they get it.

But in April I made Sugar Cookie Dough Cupcakes, and realized just how easy it is to make safe-to-eat cookie dough. I needed more safe cookie dough in my life ASAP. And here we are with this Cookie Dough Brownie recipe.

Brownies

The bottom layer of this dessert is based on my Salted Caramel Fudgy Brownies recipe. It’s fudgy, thick, and full of chocolate flavor.

I used just a touch of baking powder, as I wanted these brownies to have just a little bit of a rise, while not being cakey.

Safe Cookie Dough

To make the cookie dough safe to eat, I did not use any eggs and I baked the flour at 350 degrees for 5 minutes. Baking the flour helps to kill any unwanted contaminants.

To the flour I then added:

  • Butter
  • Salt
  • Light AND dark brown sugars
  • Granulated sugar
  • Vanilla extract
  • Milk
  • Miniature semi-sweet chocolate chips

This cookie dough frosting is easily adjustable. As usual, I recommended tasting and adjusting as needed. Adding more milk will make it creamier, powdered sugar will make it firm(er), and cream of tarter can add a bit of that cookie dough baking soda taste. Make it yours!

Ingredients

Brownies

  • 3/4 cup butter melted, then cooled so that it is no longer hot, but is still liquid
  • 3/4 cup sugar
  • 3/4 cup light brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all purpose flour
  • 3/4 cup cocoa powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder

Cookie Dough Frosting

  • 3/4 cup butter softened
  • 1/2 cup light brown sugar lightly packed
  • 1/4 cup dark brown sugar lightly packed
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup all purpose flour
  • 1 teaspoon salt
  • 1/4 cup milk
  • 1 cup miniature semi-sweet chocolate chips

Instructions

Brownies

  • Preheat oven to 325 degrees. Line bottom and sides of 9″ square pan with parchment paper.
  • In a medium sized bowl, stir together flour, cocoa powder, salt, and baking powder.
  • Stir in sugar and light brown sugar.
  • Next, stir in melted butter, eggs, and vanilla extract. Stir until batter is well combined, but still lumpy.
  • Bake for 30-33 minutes, or until toothpick inserted into center of pan comes out clean. Let cool completely before frosting.

Cookie Dough Frosting

  • Use electric mixer to beat light and dark brown sugars, sugar, and butter, until lightened and fluffy, about 2 minutes.
  • Add salt and vanilla extract to sugar mixture, and beat until well combined.
  • In a small bowl, whisk together flour and salt. Then slowly beat into sugar mixture.
  • Add milk to mixing bowl and beat until well combined.
  • Stir in chocolate chips.
  • Spread mixture over top of cooled brownies. Cut into about 20 rectangles.
